These spicy ribs are flavored with two chilies — chipotle chili pepper and chili powder — then sweetened with brown sugar and maple syrup. You can even bake the ribs a day ahead and grill just before serving.

1/4cupbrown sugar, packed
2teaspoonsground chipotle pepper
3poundspork baby back ribs
1/2cuppure maple syrup
Preheat the oven to 375 °F.
Mix the brown sugar, chili powder, chipotle chili pepper, cinnamon, garlic powder and salt in a small bowl.
Rub the spice mixture evenly on the ribs.
Place the ribs in a single layer on a foil-lined roasting pan.
Pour the water into the pan. Cover with foil.
Bake 1 hour, or until meat starts to pull away from the bones.
Brush the ribs with maple syrup.
Broil or grill over medium heat 3 to 5 minutes per side, or until ribs are evenly browned.
