Chipotle Cinnamon Baby Back Ribs

  • 1/4 cup brown sugar, packed
  • 1 Tablespoon chili powder
  • 2 teaspoons ground chipotle pepper
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 3 pounds pork baby back ribs
  • 1/4 cup water
  • 1/2 cup pure maple syrup


  1. Preheat the oven to 375 °F.
  2. Mix the brown sugar, chili powder, chipotle chili pepper, cinnamon, garlic powder and salt in a small bowl.
  3. Rub the spice mixture evenly on the ribs.
  4. Place the ribs in a single layer on a foil-lined roasting pan.
  5. Pour the water into the pan. Cover with foil.
  6. Bake 1 hour, or until meat starts to pull away from the bones.
  7. Brush the ribs with maple syrup.
  8. Broil or grill over medium heat 3 to 5 minutes per side, or until ribs are evenly browned.
