Ingredients

  • 2 Tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon sea salt, for chicken
  • 1 teaspoon turmeric, for chicken
  • 2 pounds boneless skinless chicken breast, trimmed
  • 2 1/2 cups tomato, cut into 1/2-inch chunks
  • 2 avocados, peeled and cut into 1/2-inch chunks
  • 3/4 cup red onion, coarsely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 Tablespoons lime juice
  • 1 teaspoon sea salt, for salsa
  • 1/2 teaspoon turmeric, for salsa
  • 2 cups coarsely chopped romaine lettuce
  • 8 8-inch whole-wheat tortillas

Preparation

  1. For the chicken, mix the oil, garlic powder, crushed red pepper, and sea salt, and turmeric for the chicken in a small bowl.
  2. Place the chicken in a large resealable plastic bag or glass dish. Add marinade; turn to coat well. Refrigerate for 30 minutes or longer for extra flavor.
  3. Meanwhile, for the salsa, mix the tomatoes, avocado, onion, cilantro, lime juice, and salt and turmeric for the salsa in a medium bowl. Cover. Refrigerate until ready to serve.
  4. Remove chicken from marinade. Discard any remaining marinade. Grill chicken over medium-high heat for 6 to 8 minutes per side or until cooked through (165 ┬░F.) Cut chicken into thin strips.
  5. Place lettuce on each tortilla. Fill with chicken and salsa. Fold sides of tortilla over filling and roll up to serve.
