  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 Tablespoons ground cinnamon
  • 1 1/4 cups lowfat milk
  • 2 eggs, extra large, slightly beaten
  • 1/2 pound butter, melted
  • 2 cups blueberries
  • 1 1/2 cups sugar


  1. Preheat the oven to 375 °F. 
  2. Line muffin tins with paper liners. or spray with cooking spray.
  3. Sift the flour, baking powder, baking soda, salt, and cinnamon together in a large bowl. 
  4. In another bowl, combine the milk, eggs, and melted butter. 
  5. Make a well in the middle of the dry mixture, pour the wet mixture into the well, and stir until just combined.  There will be some lumps but don’t overmix the batter!
  6. Add the blueberries and sugar and stir gently to combine.
  7. Bake 20 to 25 minutes, or until a toothpick inserted in the center of muffins comes out clean.
