  • 2 Tablespoons olive oil, for the marinade
  • 2 Tablespoons white balsamic vinegar, for the marinade
  • 24 ounces boneless skinless chicken breast, halved
  • 1/4 teaspoon salt, for the chicken
  • 1/4 teaspoon ground black pepper, for the chicken
  • 1 spray cooking spray
  • 1 Tablespoon olive oil, for the dressing
  • 1 Tablespoon white balsamic vinegar, for the dressing
  • 1/4 teaspoon salt, for the dressing
  • 1/4 teaspoon ground black pepper, for the dressing
  • 1/8 teaspoon sugar
  • 2 cups strawberries, halved
  • 4 cups baby arugula
  • 1/2 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 1/3 cup slivered almonds


  1. Combine oil and vinegar for the marinade in a large zip-top plastic bag. Add chicken to bag; seal. Let stand 10 minutes, turning occasionally.
  2. Heat a grill pan over medium-high heat.
  3. Remove chicken from marinade; discard marinade.
  4. Sprinkle chicken with salt and pepper for the chicken. Coat pan with cooking spray.
  5. Add chicken to pan; grill 5 minutes on each side or until done. Cut into slices.
  6. Whisk together the ingredients for the dressing: oil, vinegar, salt, pepper, and sugar in a large salad bowl. Add strawberries; toss to coat. Add arugula and onion to strawberry mixture; toss gently to combine. Sprinkle feta and almonds over salad. Top evenly with sliced chicken.
