  • 4 cups medium leek, washed and coursely chopped
  • 3/4 cup chopped onion
  • 2 cups peeled russet potato , cubed
  • 1 Tablespoon all-purpose flour
  • 1 Tablespoon butter
  • 4 cups reduced-sodium chicken broth or stock
  • 1/2 cup milk
  • 1 pinch salt and pepper, to taste


    1. In a soup pot, melt butter and add flour over low heat. Mix well, forming a roux which will thicken your soup and give it a wonderful flavor.
    2. Add chicken stock, leeks, onion, potatoes and bring to a boil.
    3. Cover and simmer on low for about 20-25 minutes, until potatoes are soft.
    4. Using an immersion blender, blend the soup until smooth adding the milk and adjusting salt and pepper to taste.
    5. Serve immediately.
