Ingredients

  • 16 ounces rotini pasta
  • 4 Tablespoons butter, for garlic and onion
  • 2 teaspoons minced garlic
  • 1/2 cup red onion, finely chopped
  • 1/4 cup all-purpose flour
  • 3 1/2 cups whole milk, at room temperature
  • 1 1/2 cups shredded sharp Cheddar cheese
  • 1 1/2 cups Gruyere cheese, grated
  • 1 Tablespoon Dijon mustard
  • 1/2 cup chopped fresh chives
  • 1/8 teaspoon ground red (cayenne) pepper
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon ground black pepper, divided
  • 1 1/2 pounds cooked lobster meat, coarsely chopped
  • 2 cups buttery round crackers, crushed
  • 2 Tablespoons butter, melted

Preparation

  1. Preheat oven to 375 ┬░F.
  2. Cook pasta until al dente according to package directions. Drain, rinse with cold water, and drain again.
  3. Place butter in a saucepot over medium-low heat. Melt butter and add garlic and onion; cook 5 minutes or until onion is softened.
  4. Whisk in flour; cook 1 minute. Pour in milk; bring mixture to a boil over medium-high heat, whisking frequently.
  5. Reduce heat to medium-low, and simmer 3 minutes or until sauce is smooth and thickened. Remove from heat, and whisk in the two cheeses, and the mustard, chives, and cayenne. Stir in half the salt and pepper.
  6. Fold in pasta and lobster. Pour into a greased baking dish.
  7. Combine crushed crackers and the melted butter for the crackers. Stir in remaining  salt and pepper. Sprinkle over casserole.
  8. Bake for 30 minutes or until crust is crisp and sauce bubbles. Let stand 5 minutes before serving.
