  • 4 1/2 cups water
  • 1 1/2 cups carrot, sliced
  • 1 cup chopped onion
  • 2/3 cup dried lentils, rinsed
  • 8 Tablespoons tomato paste
  • 2 Tablespoons chopped fresh parsley
  • 1 Tablespoon brown sugar
  • 1 Tablespoon white vinegar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon dried tarragon leaves
  • 1/4 teaspoon ground black pepper
  • 2 cups kale, chopped (optional)


  1. In a saucepan, bring water to a boil, adding lentils, carrots, and onions.
  2. Reduce heat; cover and simmer for about 20 minutes or until vegetables and lentils are tender.
  3. Stir in the remaining ingredients; return to a boil. Add chopped kale if desired.
  4. Reduce heat; simmer, uncovered, for 5 minutes to allow flavors to blend.
