  • 1/4 cup vegetable or canola oil
  • 2 Tablespoons minced garlic
  • 6 ounces tomato paste
  • 1 teaspoon salt
  • 1 Tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander seed
  • 2 teaspoons garam masala
  • 2 pounds boneless skinless chicken thighs, cut into small pieces
  • 3/4 cup water
  • 1 1/2 cups heavy cream


  1. Saute garlic in oil in a pressure cooker for 1 minute until golden brown. Reduce saute to low.
  2. Add tomato paste, and saute 1 minute. Add all of the spices, cooking 4 more minutes.
  3. Turn off saute. Add chicken and water and cook on Poultry setting for 5 minutes.
  4. When release cycle is complete, carefully remove lid, turn on saute, and stir in cream. Simmer for a few minutes uncovered until heated through and sauce has thickened and reduced a bit. .
