2poundspork shoulder, boneless
2teaspoonsserrano chili pepper, minced
3/4cupsesame ginger salad dressing
2Tablespoons fresh ginger, grated
12ouncesflat rice noodles
8cupsfresh broccoli, cut into 3-inch lengths
1teaspoonserrano chili pepper, thinly sliced
1/4cupchopped fresh cilantro (optional)
Heat the oil in the electric pressure cooker using the Sauté function.
Add meat; cook 5 minutes on each side or until evenly browned.
Mix together with the minced peppers, dressing, steak sauce, garlic and ginger until blended. Pour dressing mixture over meat; close and lock lid. Using Pressure Cooker function, cook on High 1 hour and 5 minutes.
Use Quick Release method to carefully vent steam before opening lid. Use tongs to remove meat from cooker and place in a bowl; cool slightly.
Meanwhile, skim and discard fat from surface of meat drippings remaining in cooker; reserve drippings for later use.
Cook noodles as directed on package, omitting salt. Add1 cup water to cooker.
Place steam rack in cooker; top with broccoli. Close and lock lid. Using Steaming function, cook 2 minutes. Use Quick Release method to carefully vent steam before opening lid. Remove broccoli from the cooker.
Place noodles on platter; top with meat mixture, broccoli, and sliced peppers.
Sprinkle with cilantro.
