Ingredients

  • 1 pound boneless skinless chicken thighs, trimmed and cut into 1/2-inch cubes
  • 4 cups canned stewed tomatoes, undrained
  • 2 cups sliced carrots
  • 1 1/2 cups chopped onion
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons fresh rosemary leaves
  • 1 1/2 teaspoons dried thyme leaves
  • 1 teaspoon sea salt
  • 4 cups water
  • 1 cup egg noodles
  • 1 Tablespoon olive oil

Preparation

  1. Place the chicken, tomatoes, carrots, onions, oregano, rosemary, thyme and sea salt in a slow cooker.
  2. Pour the water over top. Cover.
  3. Cook 4 hours on high.
  4. Stir in the noodles and oil. Cover.
  5. Cook 15 minutes on high, or just until noodles are tender.
