Cocoa-Chili Pork Ribs

  • 1/4 cup brown sugar, firmly packed
  • 2 Tablespoons cocoa powder (unsweetened)
  • 1 1/2 teaspoons ground chipotle pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 3 pounds pork baby back ribs
  • 1/4 cup apple juice
  • 2 Tablespoons tomato paste


  1. Preheat the oven to 375 ┬░F.
  2. Mix the sugar, cocoa powder, chipotle chili pepper, garlic powder, sea salt and cinnamon in a small bowl. Reserve a smalll amount of the spice mixture for basting sauce.
  3. Rub remaining spice mixture on the ribs until well coated.
  4. Place the ribs in a single layer on a foil-lined roasting pan.
  5. Cover with foil.
  6. Bake 1 hour, or until the meat starts to pull away from the bones.
  7. Meanwhile, for the basting sauce, mix the apple juice, tomato paste and reserved spice mixture in a small bowl.
  8. Grill the ribs over medium heat 2 to 3 minutes per side, or until evenly browned, brushing with basting sauce.
