Tortilla Chicken Chili

  • 1 Tablespoon olive oil
  • 1 pound boneless skinless chicken breast, cut into 3/4-inch cubes
  • 1 packet McCormick Original Chili Seasoning Mix
  • 14 1/2 ounces canned diced tomatoes, undrained
  • 15 ounces kidney beans, undrained
  • 11 ounces Mexican canned corn
  • 1/2 cup water
  • 1 1/2 cups tortilla chips


  1. Heat the oil in a large nonstick skillet on medium-high heat. Add the chicken, then cook and stir 5 minutes, or until lightly browned.
  2. Stir in the seasoning mix, tomatoes, beans, corn, water and tortilla chips. Bring to a boil.
  3. Reduce heat to low.
  4. Cover, and simmer 10 minutes, stirring occasionally.


Serve with desired toppings.
