  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon crushed rosemary
  • 1/2 teaspoon sea salt
  • 24 ounces salmon fillet, skin on, cut into serving sized pieces
  • 1 Tablespoon olive oil, for cooking salmon
  • 2 Tablespoons sugar
  • 2 teaspoons olive oil, for the spices
  • 1 cup medium fennel bulb, cored and thinly sliced
  • 1 cup cherry or grape tomatoes
  • 1 lemon, cut into wedges (optional)


  1. Mix the basil, garlic powder, oregano, rosemary and salt in a medium bowl.
  2. Sprinkle about half of the seasoning mixture over the salmon. Reserve remaining seasoning mixture in a bowl. Set aside.
  3. Heat the oil for the salmon in a large skillet on medium-high heat. Place the salmon, skin-side up, in the skillet. Cook for 5 minutes.
  4. Meanwhile, add the sugar and oil for the spices to the reserved seasoning mixture, then blend well.
  5. Toss the fennel and tomatoes with the sasoning.
  6. Turn the salmon fillets.
  7. Place the fennel mixture around the salmon in the skillet.
  8. Cook 6 more minutes, or until fish flakes easily with a fork.
  9. Serve with lemon wedges.
