  • 2 Tablespoons olive oil
  • 1 1/2 pounds chicken breast tenderloins
  • 1 cup chopped onion
  • 2 cups canned diced tomatoes, undrained
  • 1/4 cup water
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 6 cups fresh spinach


  1. Heat the oil in a large skillet on medium-high heat. Add the chicken, then cook and stir 10 minutes, or until browned.
  2. Add the onion, then cook and stir 5 minutes, or until softened.
  3. Stir in the tomatoes, water, basil, pepper, garlic powder, oregano and salt. Bring to a boil, stirring occasionally.
  4. Reduce heat to low, then cover and simmer 3 minutes, or until heated through.
  5. Stir in the spinach, then cook for 2 minutes, or until spinach begins to wilt.


Serve over pasta or couscous.
