  • 3 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup brown sugar, firmly packed
  • 1/2 cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract


  1. Mix the flour, ginger, cinnamon, baking soda, nutmeg and salt in a large bowl. Set aside.
  2. Beat the butter and brown sugar in a large bowl with an electric mixer on medium speed until light and fluffy.
  3. Add the molasses, egg and vanilla, then mix well.
  4. Gradually beat in the flour mixture on low speed until well blended.
  5. Press the dough into a thick flat disk.
  6. Wrap the disk in plastic wrap. Refrigerate for 4 hours, or overnight.
  7. Preheat the oven to 350 ┬░F.
  8. Roll out the dough to 1/4-inch thickness on a lightly floured work surface.
  9. Cut into gingerbread-men shapes with a 5-inch cookie cutter.
  10. Place cookies 1 inch apart on ungreased baking sheets.
  11. Bake 8 to 10 minutes, or until edges of cookies are set and just begin to brown.
  12. Cool the cookies on the baking sheets 1 to 2 minutes.
  13. Transfer the cookies to wire racks, and allow to cool completely.
  14. Decorate cooled cookies as desired.


If desired, decorate with raisins, currants or cinnamon red-hot candies for eyes and buttons.

Store cookies in an airtight container up to 5 days.
