  • 8 manicotti shells pasta
  • 2 cups part-skim ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 eggs
  • 1 teaspoon dried parsley flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup grated Parmesan cheese
  • 2 cups spaghetti sauce (marinara)


  1. Cook manicotti according to package directions. Drain, and rinse with cold water.
  2. Preheat oven to 350 ┬░F.
  3. In a large bowl, combine ricotta, mozzarella, egg, parsley, salt, pepper, and about half of the Parmesan. Mix well.
  4. Spoon a tablespoon of sauce into the bottom of a baking dish for each shell. Fill each manicotti shell with 3 tablespoons cheese mixture, and arrange over sauce. Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.
  5. Bake 45 minutes, or until bubbly.
