  • 2 cups long grain rice
  • 1/4 cup chopped fresh cilantro, chopped
  • 2 teaspoons vegetable or canola oil
  • 4 cups water
  • 2 limes, juiced
  • 1 1/2 Tablespoons minced garlic


  1. Heat the oil in a skillet.
  2. Add rice, chopped cilantro and minced garlic. Sauté for 3 to 4 minutes, stirring frequently.
  3. Add cold water and lime juice. Bring to a complete boil, then cover and simmer for 25 minutes or until all the liquid is absorbed.
  4. Serve hot.
