  • 1/4 cup butter, melted
  • 1/4 cup brown sugar, firm
  • 1 teaspoon salt
  • 1 teaspoon crushed rosemary
  • 1 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper
  • 3/4 teaspoon minced garlic
  • 1 pound pork tenderloin
  • 1 pound baby carrots
  • 1 cup yellow onion, cut into wedges


  1. Preheat the oven to 425 ┬░F.
  2. Mix the butter, sugar, salt, rosemary, thyme, pepper and garlic in a medium bowl.
  3. Place the pork in the center of a foil-lined 15x10x1-inch baking pan.
  4. Brush the pork with half of the glaze mixture.
  5. Add the carrots and onion to remaining glaze mixture in the bowl, then toss to coat well.
  6. Arrange the vegetables in a single layer around the pork.
  7. Roast 25 to 30 minutes, or until pork is at desired doneness.
  8. Transfer the pork to a serving platter, and keep warm.
  9. Roast the vegetables 10 minutes longer, or until tender.
  10. Slice the pork, and serve with the vegetables.
