  • 2 cups pumpkin seeds, fresh
  • 2 sprays cooking spray
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1 egg white


  1. Preheat the oven to 250 ┬░F.
  2. Spread the pumpkin seeds in a single layer on a foil-lined baking sheet that's been treated with cooking spray.
  3. Bake 45 to 50 minutes, or until pumpkin seeds are dry.
  4. Mix the sugar, cinnamon, ginger, nutmeg and allspice in a small bowl. Set aside.
  5. Beat the egg white in a large bowl until foamy.
  6. Add the dried pumpkin seeds, then toss to coat.
  7. Gradually add the sugar mixture, tossing to coat evenly.
  8. Spread the seeds in single layer on the same baking sheet.
  9. Bake 1 hour, stirring seeds after 30 minutes.
  10. Cool slightly, then break apart.
  11. Cool completely.
  12. Store in an airtight container up to 2 weeks.
