  • 1 cup chopped red onion
  • 1 teaspoon sea salt, for soaking onions
  • 2 cups water
  • 1/4 cup lime juice
  • 2 Tablespoons olive oil
  • 1 Tablespoon honey
  • 2 teaspoons garlic powder
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sea salt, for dressing
  • 2 cups diced and seeded tomato
  • 1 cup diced cucumber
  • 1/2 cup grated carrots
  • 2 Tablespoons chopped fresh cilantro


  1. Mix the onion, sea salt and water in a medium bowl. Let soak 10 minutes. Drain well.
  2. Whisk the lime juice, oil, honey, garlic powder, pepper and remaining sea salt in a large bowl.
  3. Add the drained onion, tomatoes, cucumber, carrots and cilantro, then toss well.
  4. Cover, and refrigerate until ready to serve.
