Ingredients

  • 2 sprays cooking spray
  • 1/2 cup plain Greek yogurt
  • 3 Tablespoons olive oil
  • 2 Tablespoons grated Parmesan cheese, for dip
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder, for dip
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese, for asparagus
  • 1 teaspoon garlic powder, for asparagus
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley flakes
  • 1/4 teaspoon ground black pepper
  • 1 pound asparagus, for dip, ends trimmed

Preparation

  1. Preheat the oven to 425 °F. Treat a baking sheet with cooking spray, or line with parchment paper. Set aside.
  2. For the dip, place the yogurt, oil, Parmesan, dill and garlic powder in a food processor or blender jar, then cover.
  3. Process until smooth. Season with salt and pepper to taste, if desired. Transfer to a serving bowl.
  4. For the asparagus fries, place the flour in a shallow dish.
  5. Beat the eggs in a medium bowl.
  6. Mix the panko, Parmesan cheese, garlic powder, oregano, parsley and pepper in another medium bowl.
  7. Roll the asparagus in the flour to coat, then dip in the eggs, then coat in panko.
  8. Spread the asparagus in a single layer on prepared baking sheet.
  9. Bake 15 minutes, or until golden brown and crispy.
