  • 1/4 cup butter, melted
  • 2 Tablespoons brown sugar
  • 1/2 teaspoon ground allspice
  • 1 fresh pineapple, peeled, cored and cut into 1/2-inch-thick rings


  1. Preheat the oven to 425 ┬░F.
  2. Mix the butter, brown sugar and allspice in a small bowl. Set aside.
  3. Place the pineapple rings in a single layer on a large, shallow foil-lined baking pan.
  4. Brush the rings with the butter mixture.
  5. Bake 25 minutes, or until tender.


Serve warm with ice cream, or top burgers or grilled chicken for a Caribbean twist.
