  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups sugar
  • 3/4 cup cocoa powder (unsweetened)
  • 1 cup butter, for cookies
  • 4 eggs
  • 1 Tablespoon vanilla extract, for cookies
  • 1 cup powdered (confectioner's) sugar
  • 1 cup smooth peanut butter
  • 1/4 cup butter, softened, for filling
  • 1 teaspoon vanilla extract, for filling
  • 1/2 teaspoon ground cinnamon
  • 1 Tablespoon lowfat milk



  1. Preheat the oven to 350 ┬░F.
  2. For the cookies, mix the flour, baking powder and salt in a medium bowl. Set aside.
  3. Mix the granulated sugar and cocoa powder in another medium bowl. Set aside.
  4. Microwave the butter in a large microwavable bowl on high 2 minutes, or until melted.
  5. Stir in the cocoa-sugar mixture.
  6. Add the eggs, 1 at a time, stirring until well blended after each addition.
  7. Stir in the vanilla.
  8. Gradually stir in the flour mixture until well mixed.
  9. Drop the batter by scant tablespoons about 2 inches apart onto parchment paper-lined baking sheets.
  10. Bake 8 to 10 minutes, or until cookies are set.
  11. Cool on baking sheets 1 minute.
  12. Transfer the cookies to wire racks, and allow to cool completely.


  1. Mix the powdered sugar, peanut butter, butter, vanilla, cinnamon and milk in a large bowl with an electric mixer on medium speed until smooth. If filling is too thick to spread, gradually beat in an additional 1 tablespoon of milk.
  2. To assemble, place about 1 tablespoon of filling on the flat side of 1 cookie. Top with a second cookie, pressing gently to spread the filling.
  3. Repeat with remaining cookies.
