If you love the combo of chocolate and peanut butter, you'll want to make these cookies. Two rich brownie-like cookies sandwich a dreamy peanut butter filling.
Amount Per Serving
2 1/2cupsall-purpose flour
3/4cupcocoa powder (unsweetened)
1cupbutter, for cookies
1Tablespoonvanilla extract, for cookies
1cuppowdered (confectioner's) sugar
1cupsmooth peanut butter
1/4cupbutter, softened, for filling
1teaspoonvanilla extract, for filling
FOR THE COOKIES
Preheat the oven to 350 °F.
For the cookies, mix the flour, baking powder and salt in a medium bowl. Set aside.
Mix the granulated sugar and cocoa powder in another medium bowl. Set aside.
Microwave the butter in a large microwavable bowl on high 2 minutes, or until melted.
Stir in the cocoa-sugar mixture.
Add the eggs, 1 at a time, stirring until well blended after each addition.
Stir in the vanilla.
Gradually stir in the flour mixture until well mixed.
Drop the batter by scant tablespoons about 2 inches apart onto parchment paper-lined baking sheets.
Bake 8 to 10 minutes, or until cookies are set.
Cool on baking sheets 1 minute.
Transfer the cookies to wire racks, and allow to cool completely.
FOR THE FILLING
Mix the powdered sugar, peanut butter, butter, vanilla, cinnamon and milk in a large bowl with an electric mixer on medium speed until smooth. If filling is too thick to spread, gradually beat in an additional 1 tablespoon of milk.
To assemble, place about 1 tablespoon of filling on the flat side of 1 cookie. Top with a second cookie, pressing gently to spread the filling.
Repeat with remaining cookies.
