Sheet-Pan Shrimp Scampi

Enjoy the buttery, garlic-flavored goodness of this sheet-pan shrimp scampi. Each forkful is loaded with crisp shrimp, white wine and lemon juice. Broccoli florets and cherry tomatoes add color to round out the dish. Skill Level: Intermediate

  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • 2 Tablespoons water
  • 1 packet McCormick Garlic Butter Shrimp Scampi Seasoning Mix
  • 1 pound medium or large raw shrimp (deveined), tails on
  • 2 sprays cooking spray
  • 2 cups fresh broccoli, florets
  • 1 cup halved cherry or grape tomatoes


  1. Preheat the oven to 400 ┬░F.
  2. Mix the oil, lemon juice, water and seasoning mix in a large bowl until well blended. Reserve 2 tablespoons of the marinade for the vegetables.
  3. Add the shrimp to the bowl with remaining marinade, then toss to coat well.
  4. Place the shrimp on 1 side of a large, shallow, foil-lined baking pan that's been treated with cooking spray.
  5. Place the broccoli and tomatoes in a separate large bowl. Drizzle with reserved marinade.
  6. Place the vegetables on the other side of baking pan.
  7. Bake 10 minutes, or until shrimp turn pink and are cooked through.
  8. Toss the shrimp and vegetables together before serving.
