Ingredients

  • 1 packet McCormick Grill Mates Zesty Herb Marinade
  • 1/3 cup water
  • 1/4 cup olive oil
  • 3 Tablespoons white wine vinegar
  • 2 tomatoes, large, cut into 1/2-inch slices
  • 1 red bell pepper, cut lengthwise into 2-inch strips
  • 1 zucchini, cut lengthwise into 1/4-inch slices
  • 1 yellow squash, cut lengthwise into 1/4-inch slices

Preparation

  1. Combine the marinade mix, water, oil and vinegar in a small bowl.
  2. Place the tomatoes, bell pepper, zucchini and yellow squash in a large resealable plastic bag or glass dish.
  3. Add the marinade, then turn to coat well.
  4. Refrigerate 15 minutes, or longer for extra flavor.
  5. Remove the vegetables from the marinade, reserving the marinade.
  6. Grill the vegetables over medium-high heat 2 to 4 minutes per side, or until tender-crisp, brushing with reserved marinade halfway through cooking. (Grill tomatoes about 2 to 3 minutes per side.)
  7. If desired, drizzle the vegetables with remaining marinade.
