  • 2 sprays cooking spray
  • 3 cups zucchini, cut into 3-inch long strips
  • 1 cup yellow onion, cut into 1/4-inch-wide strips
  • 1 cup red bell pepper, cut into 1/4-inch-wide strips
  • 2 teaspoons Greek seasoning
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons olive oil
  • 1/4 teaspoon sugar
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon sea salt


  1. Heat a large nonstick skillet that's been treated with cooking spray on medium-high heat until hot. Add the zucchini, onion and bell pepper.
  2. Cook and stir 6 minutes, or until browned on edges.
  3. Meanwhile, mix the Greek seasoning, vinegar, garlic powder and salt in a small bowl.
  4. Remove skillet from the heat.
  5. Add the seasoning mixture, then toss gently to coat.
