  • 2 sprays cooking spray
  • 14 ounces sweetened flaked coconut
  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 egg whites, room temperature
  • 1/4 teaspoon salt


  1. Preheat the oven to 325 ┬░F. Prepare sheet pans with parchment paper and cooking spray.
  2. Combine the coconut, condensed milk, and vanilla in a large bowl.
  3. Whip the egg whites and salt on medium-high speed with an electric mixer until they make stiff peaks.
  4. Carefully fold the egg whites into the coconut mixture.
  5. Drop the batter onto prepared sheet pans using either an ice cream scoop or 2 teaspoons.
  6. Put in the oven immediately, baking for 25 to 30 minutes, until golden brown. Cool on wire racks.


To beat egg whites, have them at room temperature for at least a half hour. Make sure that there are no egg yolk or fat particles in the whites. Beat in a clean glass or metal bowl. As you beat the egg whites, scrape down the sides of the bowl often with a rubber spatula. The whites are considered stiff when a peak stands straight up when the beaters are lifted.
