Ingredients

  • 1 spray cooking spray
  • 4 chocolate wafers
  • 1 package pistachio pudding mix, 4 serving box
  • 1 1/2 cups nonfat milk (skim)
  • 1/4 teaspoon peppermint extract
  • 2 cups Sugar-Free Whipped Topping, thawed
  • 2 1/2 Tablespoons semi-sweet chocolate chips

Preparation

  1. Crush 2 of the wafers; sprinkle onto bottom of a 9 inch pie plate sprayed with cooking spray.
  2. Beat together the pudding mix, milk and extract with a whisk for 2 minutes.
  3. Stir in the thawed whipped topping and chocolate chips; spread onto bottom of pie plate.
  4. Cut remaining wafers into quarters and put on top. Place in freezer for up to 6 hours or until firm. Remove from freezer 10 minutes before serving; let stand at room temperature to soften slightly before cutting to serve.
