A refreshing citrus picnic salad with a mixture of strawberries, jicama, cucumber, jalapeno and cilantro topped with a light dressing of lime juice, no-calorie sweetener, olive oil and poppy seeds.
Amount Per Serving
2cupsstrawberries, washed, hulled, chopped
2cupsjicama (yam bean), peeled, chopped
1cupcucumber, washed, chopped
2Tablespoonsjalapeno pepper, seeded, finely chopped (Note: for more spice, leave the seeds and white membrane intact. For less spice, omit.)
1Tablespoonfresh cilantro, finely chopped
1/2Tablespoonstevia, to taste
In a bowl, combine strawberries, jicama, cucumber, jalapeno and cilantro. Toss lightly.
In a small bowl, whisk together the lime juice, olive oil and sweetener.
Add the lime-juice mixture to the strawberry mixture, and toss lightly.
Sprinkle with poppy seeds.
