Italian-Herb Frittata

  • 1 Tablespoon olive oil
  • 1 cup chopped onion
  • 2 cups zucchini, halved lengthwise and cut into 1/4-inch-thick slices
  • 1 cup boneless ham, diced
  • 6 eggs
  • 1/4 cup lowfat milk
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 Roma or plum tomatoes, sliced
  • 1 cup shredded mozzarella cheese


  1. Heat the oil in an ovenproof nonstick skillet on medium heat. Add the onion and zucchini, then cook and stir 2 minutes. Reduce heat to medium-low.
  2. Add the ham, then cook 2 minutes.
  3. Beat the eggs, milk, Italian seasoning, salt and pepper in a bowl.
  4. Pour the egg mixture into the skillet. Cook without stirring 5 minutes, or until eggs are set on the bottom.
  5. Arrange the sliced tomatoes on top of the egg mixture. Sprinkle with cheese.
  6. Broil 4 to 5 minutes until eggs are set and cheese is lightly browned.


Sprinkle with additional Italian seasoning, if desired.
