  • 2 Tablespoons butter
  • 1 1/3 cups instant brown rice, uncooked
  • 1/2 cup chopped onion
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon dried dill
  • 1 teaspoon dried parsley flakes
  • 2 Tablespoons lemon juice
  • 1 cup water
  • 1 pound tilapia fillet
  • 1/2 teaspoon paprika


  1. Melt butter and set aside.
  2. In a baking dish, combine rice, onion, lemon pepper, dill weed, parsley flakes, lemon juice, and water.
  3. Rinse fish under cold water and pat dry. Arrange on top of rice mixture.
  4. Drizzle butter over the top of the fish and sprinkle the paprika on top.
  5. Cover and microwave on high for 10 to 12 minutes until fish is just flaky.
  6. Cool on baking rack, covered, for 2 to 3 minutes.
