  • 2 cups all-purpose baking mix
  • 1 teaspoon ground cinnamon
  • 2 eggs, beaten
  • 1 cup lowfat milk
  • 2 Tablespoons vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 2 sprays cooking spray
  • 1/2 cup pure maple syrup


  1. Stir the pancake mix and cinnamon in a large bowl until well blended.
  2. Stir in the eggs, milk, oil and vanilla just until blended.
  3. Pour 1/4 cup of batter per pancake onto a preheated skillet that's been treated with cooking spray. Cook 1 to 2 minutes per side or until golden brown, turning when pancakes begin to bubble.
  4. Serve the pancakes with maple syrup.
