  • 1 cup dates, pitted
  • 1 cup toasted slivered almonds
  • 1 Hass avocado, halved, pitted and peeled
  • 1/2 cup unsweetened flaked coconut
  • 1/4 cup chia seeds
  • 1/4 cup cocoa powder (unsweetened), unsweetened
  • 1/2 cup hulled sunflower seeds
  • 2 sprays cooking spray


  1. Line a baking pan with foil leaving a 2-inch overhang. Spray with nonstick cooking spray.
  2. Process the dates, almonds and avocado in a food processor until mixture is finely chopped and sticky.
  3. Add the coconut, chia seeds and cocoa powder, and pulse until mixture is well combined.
  4. Stir in the sunflower seeds
  5. Press the mixture into the prepared pan, and refrigerate until firm and chilled, at least 2 hours.
  6. Cut into bars, and store in the refrigerator.
