  • 14 ounces pie crust, 2 refrigerated crusts
  • 2 sprays cooking spray
  • 3 Granny Smith apples, cored and coarsely chopped
  • 1/2 cup brown sugar, firmly packed, divided in half
  • 2 teaspoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 2 teaspoons ground cinnamon, divided in half
  • 1/4 cup all-purpose flour
  • 2 Tablespoons butter, cold, cut up
  • 1/4 cup chopped walnuts


  1. Preheat the oven to 425 °F.
  2. For the mini apple pies, unroll the crusts on a lightly floured surface. Using a 3½-inch round cutter, cut out 6 rounds from each crust. Re-roll scraps as necessary.
  3. Press the dough rounds into a muffin pan that's been treated with cooking spray. Set aside.
  4. Toss the apples, half of the brown sugar, smaller portion of flour, the vanilla and half of the cinnamon in a large bowl. Divide evenly among crusts.
  5. For the topping, mix remaining brown sugar, remaining flour, the butter and remaining cinnamon in a medium bowl until crumbly.
  6. Stir in the walnuts.
  7. Sprinkle evenly over apple filling.
  8. Bake 14 to 18 minutes or until topping is golden brown, and filling is bubbly.
  9. Cool completely in a pan on a wire rack.
