  • 1 1 oz package vanilla sugar-free instant pudding mix
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup lowfat milk
  • 1 cup canned pumpkin
  • 1 cup frozen whipped topping, fat free, for the mousse
  • 5 teaspoons chopped pecans, toasted
  • 1/2 cup frozen whipped topping, fat free, for garnish


  1. Combine the pudding mix, cinnamon and ginger in a large bowl. 
  2. Add the milk and pumpkin, then beat with a wire whisk 2 minutes, or until well blended.
  3. Gently stir in the whipped topping for the mousse.
  4. Spoon the mousse into a serving bowl, or into 5 dessert glasses.
  5. Refrigerate at least 1 hour to blend flavors.
  6. Just before serving, top with whipped topping for garnish and the toasted pecans.
