Seasoned-Tomato Bruschetta

For a taste of summer, chop juicy, ripe tomatoes along with fresh basil, and serve on toasted bread slices. Skill Level: Intermediate

  • 2 cups Roma or plum tomato
  • 1/4 cup dried basil
  • 4 Tablespoons olive oil, divided in half
  • 1 Tablespoon balsamic vinegar
  • 1 teaspoon seasoned salt
  • 1 loaf French baguette


  1. Preheat the oven to 425 ┬░F.
  2. Mix the tomatoes, basil, half of the oil, the vinegar and seasoned salt in a medium bowl until well blended. Cover. Let stand at room temperature 30 minutes to allow flavors to blend.
  3. Meanwhile, slice the bread into 1/2-inch-thick slices. Brush the slices lightly on both sides with remaining oil.
  4. Place the bread in a single layer on a baking sheet.
  5. Bake 6 to 8 minutes or until crisp and light brown, turning once.
  6. Cool on a wire rack.
  7. Top each bread slice with the seasoned tomatoes.
