Ingredients

  • 1 pound catfish fillet
  • 1 teaspoon McCormick Grill Mates Roasted Garlic & Herb Seasoning
  • 3/4 teaspoon dried thyme leaves
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground red (cayenne) pepper
  • 1 Tablespoon butter
  • 1/2 lemon, cut into wedges (optional)

Preparation

  1. Rinse the catfish fillets, and pat dry.
  2. Mix the herb seasoning, thyme, allspice and ground red pepper in a bowl.
  3. Sprinkle one side of each fillet with the seasoning mixture.
  4. Heat a nonstick skillet on medium-high heat until hot. Add the butter. When melted, tilt the skillet to coat the bottom. Add the fish, seasoned-side down, and cook 4 minutes.
  5. Turn and cook 2 to 3 minutes longer or until fish flakes easily with a fork.
  6. Serve with lemon wedge.
