1poundcatfish fillet
1teaspoonMcCormick Grill Mates Roasted Garlic & Herb Seasoning
3/4teaspoondried thyme leaves
1/4teaspoonground allspice
1/8teaspoonground red (cayenne) pepper
1Tablespoonbutter
1/2lemon, cut into wedges (optional)
Preparation
Rinse the catfish fillets, and pat dry.
Mix the herb seasoning, thyme, allspice and ground red pepper in a bowl.
Sprinkle one side of each fillet with the seasoning mixture.
Heat a nonstick skillet on medium-high heat until hot. Add the butter. When melted, tilt the skillet to coat the bottom. Add the fish, seasoned-side down, and cook 4 minutes.
Turn and cook 2 to 3 minutes longer or until fish flakes easily with a fork.
Serve with lemon wedge.
