A quick and easy Italian stir-fry! Asparagus is a powerhouse of nutrition, a good source of several vitamins as well as chromium, a trace mineral that helps maintain blood sugar levels.
Amount Per Serving
1/2poundmedium or large raw shrimp (deveined), thawed
2cupsasparagus, fresh, trimmed and coarsely chopped
1cupcherry or grape tomatoes, halved
1dashhot pepper sauce, to taste
1Tablespoongrated Romano cheese
Cook the pasta per package directions and drain.
Meanwhile, heat the olive oil over medium-low heat and sauté thawed shrimp, asparagus, tomatoes, and garlic about 5 minutes until shrimp are pink and asparagus is slightly tender.
Stir in hot sauce and salt.
Mix sauce with pasta.
Sprinkle with Romano cheese.
