Easy Baja Fish Tacos

  • 2 cups prepared coleslaw
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup yellow cornmeal
  • 4 teaspoons chili powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1 pound tilapia fillet
  • 2 Tablespoons vegetable or canola oil
  • 8 corn tortillas, warmed


  1. Mix the coleslaw and cilantro in a medium bowl. Cover. Refrigerate until ready to serve.
  2. Mix the cornmeal, chili powder, salt and garlic powder in a shallow dish.
  3. Coat the fish evenly with the cornmeal mixture.
  4. Heat the oil in large nonstick skillet on medium heat. Add the fish, and cook 3 to 5 minutes per side or until golden brown and the fish flakes easily with a fork.
  5. Cut the fish into portions.
  6. Serve in warmed tortillas topped with coleslaw.
