Vanilla Hot-Milk Butter Cake

  • 2 sprays cooking spray
  • 2 1/4 cups all-purpose flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1 cup lowfat milk
  • 1 Tablespoon vanilla extract
  • 4 eggs
  • 2 cups sugar
  • 1 Tablespoon powdered (confectioner's) sugar


  1. Preheat the oven to 350 ┬░F.
  2. Treat a 13x9-inch baking pan with cooking spray and flour.
  3. Mix the flour, baking powder and salt in a medium bowl. Set aside.
  4. Microwave the butter and milk in a medium microwavable bowl on high 2 minutes or until butter is melted. Stir in the vanilla. Set aside.
  5. Beat the eggs in a large bowl with an electric mixer on medium speed 5 minutes or until fluffy.
  6. Gradually add the granulated sugar, and beat well. Alternately add the flour mixture and milk mixture, beating on low speed after each addition just until mixed.
  7. Pour the batter into the prepared pan.
  8. Bake 35 to 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan on a wire rack.
  10. Sprinkle with the powdered sugar.
