  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1 cup butter, softened
  • 1 1/4 cups sugar
  • 4 eggs
  • 5 teaspoons vanilla extract
  • 2 sprays cooking spray


  1. Preheat the oven to 325 ┬░F.
  2. Mix the flour, baking powder, salt and nutmeg in a medium bowl. Set aside.
  3. Beat the butter and sugar in a large bowl with an electric mixer on medium speed 5 minutes, or until light and fluffy.
  4. Beat in the eggs, 1 at a time. Gradually beat in half of the flour mixture. Mix in the vanilla and remaining flour mixture.
  5. Pour the batter into a 9x5x3-inch loaf pan that's been treated with cooking spray and flour.
  6. Bake 60 to 65 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool on a wire rack.
