  • 1 1/3 cups all-purpose flour
  • 1 cup brown sugar, firmly packed, for the cake
  • 1 cup sugar
  • 2 teaspoons ground allspice
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt, for the cake
  • 3 eggs
  • 1 1/4 cups lowfat milk
  • 1 cup vegetable or canola oil
  • 2 teaspoons vanilla extract, for the cake
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • 2 sprays cooking spray
  • 1/4 cup brown sugar, firmly packed, for the glaze
  • 1/3 cup butter
  • 5 teaspoons heavy cream
  • 1/8 Tablespoon salt, for the glaze
  • 3/4 cup powdered (confectioner's) sugar
  • 1/2 teaspoon vanilla extract, for the glaze



  1. Preheat the oven to 350 ┬░F.
  2. Mix the flour, brown sugar, granulated sugar, allspice, baking powder, cinnamon, ginger, baking soda and salt in a large bowl.
  3. Add the eggs, milk, oil and vanilla extract. Beat with an electric mixer on low speed just until ingredients are moistened.
  4. Beat on high speed 2 minutes.
  5. Stir in the raisins and walnuts.
  6. Pour into a 10-cup Bundt pan that's been treated with cooking spray and dusted with flour.
  7. Bake 55 minutes or until sides of cake pull away from the pan.
  8. Cool in pan 20 minutes. Invert cake onto a wire rack to allow to cool completely.


  1. Meanwhile, mix the brown sugar, the butter, cream and salt in a 2-quart saucepan. Bring to a boil on medium heat, stirring constantly. Reduce heat to low.
  2. Stir in the powdered sugar and vanilla extract until well blended and smooth. Simmer 1 minute. Remove from heat.
  3. Cool slightly before spooning over cooled cake.
  4. Let stand until glaze is set.
