Apple-Pear Crisp

Fall's favorite fruits unite to make this comfort dessert extra special. Using cinnamon in both the fruit mixture and the topping gives the dish a rich, deep flavor. Skill Level: Intermediate

  • 2 cups red apple, cored, sliced
  • 2 cups pear, cored, sliced
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 2 Tablespoons corn starch
  • 2 teaspoons ground cinnamon, for the fruit
  • 2 sprays cooking spray
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup all-purpose flour
  • 1/2 cup quick oats
  • 1 teaspoon ground cinnamon, for the topping
  • 1/4 cup butter


  1. Preheat the oven to 350 ┬░F.
  2. For the filling, toss the apple and pear slices with the lemon juice and vanilla extract in a large bowl.
  3. Mix the cornstarch and cinnamon for the fruit in a small bowl.
  4. Sprinkle the cornstarch mixture over the fruit, then toss to coat well.
  5. Spoon the mixture into a baking dish that's been treated with cooking spray.
  6. For the topping, mix the brown sugar, flour, oats and cinnamon for the topping in a medium bowl.
  7. Cut in the butter with a pastry blender or 2 knives until coarse crumbs form.
  8. Sprinkle the topping evenly over fruit.
  9. Bake 40 to 45 minutes or until fruit is tender, and topping is golden brown.
