Ingredients

  • 1 egg
  • 1 2/3 cups lowfat milk
  • 1/2 cup canned pumpkin
  • 2 Tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 Tablespoons brown sugar
  • 1 Tablespoon pumpkin pie spice
  • 1 Tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 sprays cooking spray

Preparation

  1. Beat the egg in a medium bowl.
  2. Add the milk, pumpkin, butter and vanilla, and mix well.
  3. In a separate larger bowl, mix the flour, brown sugar, pumpkin pie spice, baking powder, baking soda and salt until well blended.
  4. Add the pumpkin mixture, and stir just until blended. Let stand 5 minutes.
  5. Pour 1/4 cup of batter per pancake onto preheated griddle or skillet that's been treated with cooking spray. Cook 1 to 2 minutes per side or until golden brown, turning when pancakes begin to bubble.
