  • 2 cups peeled russet potato , sliced or chopped
  • 1 cup red onion, sliced or chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 Tablespoons butter


  1. Preheat grill for medium heat.
  2. For each serving, cut a large square of aluminum foil. Put potato and onion into the center of each foil square, sprinkle with salt and pepper and dab with half a tablespoon of butter.
  3. Wrap into a flattened square, and seal edges well.
  4. Place packet(s) over indirect heat, and close grill cover.
  5. Cook for approximately 30 minutes, turning once.
  6. Serve immediately.
