  • 3 Tablespoons butter
  • 1/3 cup chopped pecans
  • 1 pound zucchini, sliced
  • 1 Tablespoon grated Parmesan cheese


  1. Melt 1 tablespoon butter, add pecans and stir until lightly browned, about 5 minutes and remove pecans from skillet.
  2. Add remaining 2 tablespoons butter and melt.
  3. Add zucchini, and saute until soft.
  4. Toss with pecans and cheese. Serve.
