Ingredients

  • 1/4 cup orange juice
  • 2 Tablespoons lemon juice
  • 1 Tablespoon honey
  • 1 1/2 teaspoons dried thyme leaves
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon ground red (cayenne) pepper
  • 3 nectarines, pitted and cubed
  • 3 ears corn on the cob, grilled and kernels cut from cob
  • 1 1/2 cups canned black beans, drained and rinsed
  • 1/4 cup celery, finely chopped

Preparation

  1. Mix the orange juice, lemon juice, honey, thyme, cinnamon, garlic powder, sea salt and ground red pepper in a large bowl until well blended.
  2. Add the nectarines, corn, beans and celery. Toss to coat well, then cover.
  3. Refrigerate at least 1 hour to blend flavors.
  4. Toss before serving.

Tips

Grill corn on the cob in advance to reduce prep time.

Serve with grilled meats or chicken or take it chilled to your next picnic.
