Ingredients

  • 3/4 cup chopped onion
  • 3/4 cup red bell pepper, diced
  • 1 1/2 cups canned low-sodium black beans
  • 1 1/2 cups low sodium canned white beans (cannellini)
  • 1 1/2 cups canned diced tomatoes with green chili peppers
  • 1 Tablespoon chili powder
  • 1 Tablespoon ground cumin
  • 2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1 pound boneless skinless chicken breast
  • 1 1/2 cups enchilada sauce
  • 3 Tablespoons chopped fresh cilantro

Preparation

  1. Combine the onion, bell pepper, black and white beans, tomatoes, chili powder, cumin, garlic, salt, chicken and enchilada sauce in a slow cooker.
  2. Cook on low for 6 to 8 hours or high for 3 to 4 hours. 
  3. Remove the chicken, shred, and return to the slow cooker.
  4. Serve topped with cilantro.
