Ingredients

  • 1 Tablespoon brown sugar
  • 1 1/2 teaspoons dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 8 ounces asparagus, rinsed and trimmed
  • 1 red bell pepper, cut lengthwise into 6 strips
  • 1 zucchini, rinsed, cut into 1/2-inch slices
  • 1 yellow squash, rinsed, cut into 1/2-inch slices
  • 1 red onion, cut into 1/2-inch rounds
  • 1 sweet potato, rinsed, sliced, precooked al dente in microwave
  • 2 Tablespoons olive oil

Preparation

  1. Mix the brown sugar, basil, salt, garlic powder and black pepper in a small bowl.
  2. Place the asparagus, bell pepper, zucchini, squash, onion and sweet potato in a large bowl. Drizzle the olive oil over vegetables, then toss to coat well.
  3. Add the seasoning mixture, then toss to coat well.
  4. Place vegetables in a grill basket, grill rack or thread onto skewers.
  5. Grill over medium heat 10 to 12 minutes or until vegetables are tender, turning occasionally.

Tips

Prepare skewers in advance to save time later.
