  • 1/2 cup butter, room temperature
  • 1 cup sugar, for the loaf
  • 2 eggs
  • 1/4 cup lowfat milk
  • 2 lemons, juice and zest for the loaf
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 lemon, juiced, for the glaze
  • 1/4 cup sugar, for the glaze


  1. Preheat oven to 350 ┬░F.
  2. In a large bowl, cream butter and sugar with an electric mixer.
  3. Add eggs, one at a time, beating until creamy.
  4. Blend in milk and lemon juice for the loaf.
  5. In another bowl, mix together flour, baking powder, salt and lemon rind.
  6. Pour into batter. Stir to moisten. Scrape into greased 9 x 5 inch loaf pan.
  7. Bake for 55 to 60 minutes.
  8. Cool in pan for 5 minutes. Meanwhile, combine lemon juice and sugar for the glaze in saucepan. Stir and heat till sugar is dissolved.
  9. Remove loaf to rack and while still hot, poke holes with a toothpick all over the top of the loaf. Spoon glaze evenly over top.
  10. Cool and serve.
